Refreshing Summer Treat

Delicious Lemon Bars with a Lemon Glaze 











Recipe 

Base
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup margarine or butter, softened

Filling
4 eggs, slightly beaten
2 cups of sugar
1/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup lemon juice (if you like lime better you can use lime juice instead)

Frosting/ Glaze
1 cup powdered sugar
2-3 tablespoon lemon juice (again you can substitute lime juice)

-- Heat Oven to 350 degrees F
-- Combine all base ingredients at a low speed  until crumbly
-- Press the dough into the bottom of an ungreased 13"x9" pan (I used a smaller pan, which is why mine are thicker-- I would suggest using the suggested time unless you want a one and done dessert instead of going back for 2nds, 3rds and 4ths...5ths? -- it happens no judgement here)
--Bake at 350 for 20 - 30 mins or until slightly golden brown

-- While the base is baking, combine all filling ingredients except the lemon juice, blend well
-- Stir in lemon juice and then pour mixture over the warm base

-- Bake at 350 for another 25-30 mins or until the top is golden brown
-- Cool for an hour

--In a small bowl mix the frosting/glaze ingredients (if the spreading consistency is not glaze-like just add a bit of water until you reach the desired consistency, unless you want to make it super lemony then just keep adding lemon juice to the powdered sugar until it is easy to sread on)
-- Pour or spread over cooled bars

-- Once frosting sets cut into bars!

-- If the bars seem a bit gooey  (which is great btw, in my opinion anyways) I then refrigerated them for a bit to help hold them together.

Final task is to enjoy them! Pair with some tea in the afternoon or a nice glass of white wine or a wine spritzer.
